两款市售苦荞醋沉淀中黄酮含量的测定

Determination of Flavonoids in Precipitates of Two Commercially Available Tartary Buckwheat Vinegar

摘要 苦荞醋中富含黄酮类物质,然而黄酮类物质水溶性差,醋易有沉淀。在优化试验条件的基础上,用芦丁作为标准物质,通过紫外-可见分光光度法测定并比较了两款市售苦荞醋沉淀中的黄酮含量,发现的黄酮含量分别为0.43%和0.31%。为苦荞醋中活性物质黄酮的保护及生产工艺中黄酮类化合物的改性研究提供了理论基础。 Flavonoids are riched in tartary buckwheat vinegar.but the water solubility of flavonoids is poor,and vinegar is prone to precipitation.Under optimum conditions,we compared the flavonoids of two commercially available tartary buckwheat vinegar,utilized the UV-Vis spectrophotometer,and rutin as the reference material.Result showed that the flavonoid content was 0.43%and 0.31%,respectively.Therefore,this study provided a theoretical basis for the protection of the active substance flavonoids in tartary buckwheat vinegar and the research on the modification of flavonoids in the production process.
