摘要
金枪鱼素有“海洋黄金”之称,因其富含优质蛋白、维A、维D,以及DHA、EPA等多不饱和脂肪酸而深受消费者青睐。从金枪鱼营养价值、鱼丸加工关键技术、影响因素、贮藏特性及保鲜技术及金枪鱼丸开发前景等方面综述了鱼丸生产工艺,为金枪鱼鱼丸开发提供有益支撑。
Known as“Ocean Gold”tuna is popular with consumers for its high-quality protein,vitamins A and D,as well as unsaturated fat such as DHA and EPA.In this paper,the nutritional value of tuna,the key processing technology of tuna balls,the influencing factors,the storage characteristics,the fresh-keeping technology and the development prospect of tuna balls were reviewed,for tuna fish ball development to provide useful support.
