朱砂烟和普通烤烟烟叶酚类物质差异分析 被引量:1

摘要 为考察朱砂烟(云烟97变异种)和普通烤烟(云烟97)及其卷烟烟气中酚类物质含量的差异,采用气相色谱法和液相色谱法对朱砂烟叶和普通烟叶样品进行分析,并对两种烟叶卷烟进行感官质量评价。结果表明,完善后的福林-酚法测定烟叶总酚含量的最优条件为:样品用量0.5 mL,福林-酚试剂用量2.0 mL,充分混合后再加入10%碳酸钠溶液4.0 mL,25℃下避光放置40 min,之后在760 nm波长下测定样品中总酚类物质含量。同部位烤烟样品中朱砂烟总酚类物质含量较高。不同烤烟样品的主要多酚类物质总量差异显著,其中朱砂烟烟叶上特征性红色斑块含量最高,中、上部朱砂烟叶和红色斑块主要多酚类物质总量比云烟97分别高出18.71%、22.76%和31.82%、41.95%;不同部位烟叶之间主要多酚类物质含量差异较大,上部叶含量较高。朱砂烟叶及红色斑块的黄酮类物质含量处于较高水平,这也是影响朱砂烟外观特征的因素之一。朱砂烟中、上部叶卷烟中各挥发性酚类物质含量大多高于云烟97,总量均高于云烟97。朱砂烟卷烟的感官质量评价得分高于云烟97,这与该烟叶各酚类物质含量优于云烟97的结果具有一致性。该研究结果可为朱砂烟的选用提供相关参考。 In order to investigate the difference in the content of phenolic compounds in cinnabar tobacco and common flue-cured tobacco and their cigarette smoke,the samples of cinnabar tobacco and common tobacco were analyzed by gas chromatography and liquid chromatography,and the sensory quality of the two tobacco leaves was evaluated.The results showed that the optimal conditions for determining the total phenolic content of tobacco leaves by the perfect forin-phenol method were as follows:0.5 mL of sample dosage,2 mL of forin-phenol reagent,4.0 mL of 10%sodium carbonate solution after full mixing,placed in the dark at 25℃for 40 min,and then determined the total phenolic content in the sample at a wavelength of 760 nm.The total phenolic content of cinnabar tobacco in the flue-cured tobacco samples of the same part was high.The total amount of major polyphenols in different flue-cured tobacco samples varied significantly,among which the content of characteristic red flecks on cinnabar tobacco leaves was the highest,and the total amount of major polyphenols in the middle and upper cinnabar tobacco leaves and the middle and upper red flecks were 18.71%,22.76%,31.82%and 41.95%higher than those in Yunyan 97,respectively.The content of major polyphenols varied greatly between tobacco leaves in different parts,and the content of upper leaves was higher.The content of flavonoids in cinnabar tobacco leaves and red flecks is at a high level,which is also one of the factors affecting the appearance characteristics of cinnabar smoke.The content of volatile phenolic substances in the middle and upper leaves of cinnabar tobacco was mostly higher than that of Yunyan 97,and the total amount was higher than that of Yunyan 97.The sensory quality evaluation score of cinnabar cigarette was higher than that of Yunyan 97,which was consistent with the result that the content of phenolic substances in the tobacco leaf was better than that of Yunyan 97.The results of this study can provide a relevant reference for the selection of cinnabar smoke.
