摘要 样品经微波消解仪消解处理后,采用电感耦合等离子体质谱法(ICP-MS)对甘肃产区9种特色食用菌中15种金属元素含量进行分析检测。15种金属标准液线性关系良好(R2≥0.993 0),加标回收率为98.94%~105.45%,相对标准偏差范围为0.20%~3.23%。其中Hg未检出,Pb和Cd低于国家食品中污染物限量,As和Cr存在轻度污染。10种营养元素含量均较高,K最高,Ca和Mg次之,杏鲍菇和香菇中营养元素含量最高,将为今后食用菌资源的开发利用与消费者合理膳食提供借鉴。 After the sample was processed by microwave digestion instrument,the content of 15 metal elements in 9 kinds of edible fungi in Gansu province was determined by inductively coupled plasma mass spectrometry(ICP-MS).The linear relationship of 15 metal standard liquids was good(R2≥0.9930).The recoveries ranged from 98.94%to 105.45%,and the relative standard deviations ranged from 0.20%to 3.23%.Hg was not detected,Pb and Cd were lower than the national limits of pollutants in food,and As and Cr were mildly polluted.K was the highest,followed by Ca and Mg.Pleurotus eryngii and lentinus edodes had the highest content of nutrient elements,which would provide reference for the development and utilization of edible mushroom resources and rational diet of consumers in the future.
