摘要
作为一种具有多种生理功能的生物活性物质,褪黑素能够通过清除自由基、提高抗氧化酶活性等途径提高机体抗氧化能力,并对机体的脂质代谢起到双向调控作用。本文阐述了褪黑素对机体抗氧化能力和脂质代谢的作用机制,以期为外源褪黑素在抗氧化能力与脂质代谢方面的进一步深入研究,及其未来在生产中应用于提高畜禽肉产品的抗氧化能力、延长货架期、改善肉品质等方面提供理论参考。
As a biologically active substance with multiple physiological functions,melatonin can improve the antioxidant capacity by scavenging free radicals and increasing the activity of antioxidant enzymes,and also has a two-way regulatory effect on the lipid metabolism.This article summarizes the effect of melatonin on antioxidant capacity and lipid metabolism and related mechanisms,with a view to further in-depth research on the antioxidant capacity and lipid metabolism of exogenous melatonin,as well as its application in production in the future.It provides a theoretical reference for improving the antioxidant capacity of livestock and poultry meat products,extending the shelf life,and improving meat quality.
