南宁铁路辖区2018-2021年食品微生物污染状况调查与分析 被引量:1

摘要 目的:了解南宁铁路辖区食品微生物污染情况,为食品安全监管及预防食源性疾病提供科学依据。方法:采集2018—2021年在南宁铁路辖区销售的食品,按相关标准进行微生物学检测。结果:一般卫生指标和致病菌总不合格率分别为5.05%和3.18%,食品微生物污染主要集中在散装食品,其中鲜湿米粉一般卫生指标和水产品致病菌不合格率最高,分别为44.40%和30.00%;7种常见食源性致病菌中检出6种,不合格率呈逐年下降趋势,主要为蜡样芽孢杆菌(19.1%)和致泻大肠埃希氏菌(3.3%)。结论:南宁铁路地区总体食品安全情况良好,但存在微生物污染,应重点加强盒饭、鲜湿米粉、水产品生产和销售环节的监管。 Objective:The aim of this study was to investigate the status of microbial contamination of food in in Nanning railway area,so as to provide fundamental data for food safety risk evaluation and administrative decision.Method:The samples of food solds in Nanning railway district from 2018 to 2021 was collected for microbiological testing according to relevant standards.Result:The total unqualified rate of general health indicators was 5.05%and pathogenic bacteria was 3.18%.Microbiological contamination of food is mainly concentrated in bulk food.Among them,the unqualified rates of general health indicators of fresh and wet rice noodles and pathogenic bacteria of aquatic products were the highest,which were 44.40%and 30.00%.Six of the seven common food-borne pathogens were detected,and the unqualified rate showing a downward trend year by year.The main species was Bacillus cereus(19.1%)and followed by diarrheogenic Escherichia coli(3.3%).Conclusion:The overall contamination of food sold in Nanning railway area was good,but there was still microbial contamination.The key is to strengthen the box lunch,fresh wet rice noodles,aquatic products food production and sales and other links of supervision.
