摘要
随着科学技术的进步,电子技术在各行各业得到了广泛应用。电子鼻具有高灵敏、快速、准确和无损等优点,在食品工业领域得到了越来越多的关注。电子鼻是一种新型的传感器技术,可以模拟人类的嗅觉系统对气体进行检测和识别,可用于食品行业的质量控制和安全监测。本文综述电子鼻在果蔬及肉类检测中的应用进展,涉及工作原理、适用场景、未来发展等多方面内容。
With the progress of science and technology,electronic technology has been widely used in all walks of life.Electronic nose has the advantages of high sensitivity,speed,accuracy and nondestructive.The electronic nose has gained more and more attention in the food industry.The electronic nose is a new type of sensor technology that can simulate the human olfactory system to detect and identify gases,which can be used for quality control and safety monitoring in the food industry.This paper summarizes the application progress of electronic nose in fruits and vegetables and meat detection,involving the working principle,applicable scenarios,future development and other aspects.
