摘要
氨基糖苷类药物是感染性疾病防控常用抗生素,具有抗菌谱广、抗菌效果好、成本低等突出优势,长期以来在人类和动物疫病防控中居于重要地位。近年来,该药物在食品动物中的过量使用产生了严重的药物残留,对动物和人类健康危害严重。电化学传感检测方法具有快速、灵敏和便携等多种优点,在食品安全检测中具有重要应用。本文基于电化学传感器的构建原理,分别就基于抗体的电化学传感器、仿生印迹电化学传感器、适配体电化学传感器和双识别电化学传感器等进行了论述,总结了相应的传感识别原理和信号增敏途径,分析了影响因素,探讨了传感识别机制与检测性能之间的关系,明确了未来的发展趋势。相关内容为新型传感识别方法的建立奠定了基础,为动物性食品中氨基糖苷类药物的安全检测和风险分析提供了技术支撑。
Aminoglycosides are commonly used antibiotics for the prevention and treatment of infectious diseases.It has prominent advantages,such as a broad antibacterial spectrum,good antibacterial effect and low cost.It has long played an important role in the prevention and control of human and animal epidemics.In recent years,the excessive use of streptomycin has resulted in serious drug residues in food animals,producing serious hazards to animal and human health.Electrochemical sensing detection methods have various advantages,including high speed,sensitivity and portability.It plays an important role in the field of food safety analysis.Based on the construction principle of electrochemical sensors,this review discusses the antibody-based electrochemical sensor,biomimeticimprinting electrochemical sensor,adapter-based electrochemical sensor,double-recognizing electrochemical sensor,and so on.It summarizes the corresponding sensing recognition principles and signal-sensitizing pathways,analyzes the influencing factors,explores the relationships between the sensing recognition mechanism and detection performance,and clarifies the future development trend.The related contents have laid the foundation for the establishment of a new sensing recognition method,and provided technical supports for the safety detection and risk analysis of streptomycin in animal-derived foods.
