摘要
介绍了国际食品法典委员会、欧盟、美国、澳大利亚、新西兰、日本和中国等国家和地区的炼乳和浓缩乳相关的法规标准,从术语定义、原料和配料、理化指标、微生物限量和其他要求等方面,对各国的炼乳和浓缩乳的标准进行了介绍和对比分析;研究看出:炼乳的食品安全国家标准与国际标准接轨,新修订炼乳的品类和指标规定与国际基本一致;新增的食品工业用浓缩乳国家标准,参照借鉴了美国和日本等国家先进标准,规定了不同热处理杀菌工艺和不进行任何热处理工艺浓缩乳品类及其微生物指标和冷链储运要求;我国新发布的《食品安全国家标准浓缩乳制品》,丰富了浓缩乳制品的品类,有利食品行业高质量发展。
The regulations and standards of the evaporated milk and condensed(concentrated)milk of Codex Alimentarius Commission,European Union,United States,Australia and New Zealand,Japan and China were introduced in this article.The standards of evaporated milk and concentrated milk among various countries were introduced and compared in terms of definition,raw materials and ingredients,physical and chemical indicators,microbial limits,and other requirements.The Chinese national standard of evaporated milk was basically in line with the international standard.The newly revised category and index provisions were mainly consistent with the international standards and more rigorous.The newly added national standard of concentrated milk usage for food industry,referring to the advanced standards of the United States and Japan,stipulated different heat treatment and sterilization process and no heat treatment process for concentrated milk,their microbial indicators and cold-chain storage and transportation requirements;The newly issued“National Standard for Concentrated Dairy Products for Food Safety”enriches categories of the condensed dairy products and was conducive to the high quality development of the food industry in China.
