摘要
鲫鱼是一类重要的经济型食用鱼,不仅肉质鲜美,鱼鳞也有极高的利用价值。从鲫鱼鱼鳞的结构以及鲫鱼鱼鳞胶原蛋白等有效成分的提取方法、鲫鱼鱼鳞抗菌活性肽的制备方法以及鱼鳞的应用等方面总结了鲫鱼鱼鳞结构与有效成分的研究进展,旨在为鲫鱼鱼鳞的深加工与进一步优化利用提供参考。
Crucian carp is an important economic food fish,not only its meat is delicious,but also its scales have high utilization value.This paper summarizes the research progress on the structure and effective components of Carassius auratus fish scales from the aspects of the structure of fish scale and the extraction methods of effective components such as collagen of Carassius auratus fish scales,the preparation methods of antibacterial active peptides of Carassius auratus fish scales and the applications of fish scales,aiming to provide reference for the deep processing and further optimization of the utilization of Carassius auratus fish scales.
