二氢杨梅素亚油酸酯提高火麻油抗氧化性的研究

摘要 二氢杨梅素(DMY)是一种天然抗氧化剂,为了提升其对脂质的抗氧化效果,前期研究了DMY的酯化修饰问题。本试验基于火麻油,研究二氢杨梅素酯化物(DMYL)的抗氧化效果。结果显示,将酯化物按照酯化度与添加量不同分别添加到冷榨火麻油中进行抗氧化试验,酯化度为3的酯化物(DMYL3)的抗氧化效果最好。添加0.05%的DMYL3,4℃(冰箱冷藏)下保质期可达到89个月,室温25℃下的保质期超过20个月,这结果远高于DMY(室温25℃)保质期5.5个月;同合成抗氧化剂TBHQ与BHT相比,添加0.02%(国家标准最大量)的BHT,25℃室温下为1.6个月;添加0.02%的TBHQ,25℃室温下为4.8个月。说明酯化度为3的DMYL对火麻油的抗氧化效果远远优于TBHQ与BHT。 Dihydromyricetin(DMY)is a natural antioxidant.In order to enhance its antioxidant effect on lipids,the esterification modification of DMY was previously studied.This test was based on hemp oil to investigate the antioxidant effect of dihydromyricetin ester(DMYL).The results indicated that the esterified products were added to the cold-pressed hemp oil according to the degree of esterification and the amount of addition to carry out the antioxidant test,and the esterified product with a degree of esterification of 3(DMYL3)had the best antioxidant effect.Adding 0.05%DMYL3,the shelf life at 4℃(refrigerator)could reach 89 months,and the shelf life at room temperature 25℃was more than 20 months,much higher than the shelf life of DMY(room temperature 25℃)of 5.5 months;compared with BHT,the oxidant TBHQ was added with 0.02%(the maximum amount of national standard)BHT,and it was 1.6 months at room temperature of 25℃;when 0.02%of TBHQ was added,it was 4.8 months at room temperature of 25℃,indicating that the antioxidant effect of DMYL with esterification degree of 3 on hemp oil was far better than that of TBHQ and BHT.
