摘要 花青素是一种普遍存在于植物器官中天然的水溶性色素,其与糖通过糖苷键形成花色苷,在化妆品、食品及医药行业具有广阔的应用前景。花青素不仅具有抗氧化、抗衰老、抗炎等生物活性,还具有清除自由基、抗动脉粥样硬化、调节代谢等医药功能。本文主要对紫甘蓝中花色苷的抗氧化等生物活性、稳定性,以及花色苷的提取、分离纯化及鉴定等方面进行综述,旨在为紫甘蓝花色苷开发利用提供参考。 Anthocyanin is a kind of natural water-soluble pigment that exists in plant organs.It reacts with sugar to produce glycosidic bonds to form anthocyanins.It has broad application prospects in cosmetics,food and pharmaceutical industries.It not only has biological activities such as anti-oxidation,anti-aging and anti-inflammatory,but also has medical functions such as scavenging free radicals,anti atherosclerosis and regulating metabolism.In this paper,the antioxidant and other biological activities and stability of anthocyanins in purple cabbage were reviewed,as well as the extraction,purification and identification of anthocyanins,in order to provide reference for the development and utilization of anthocyanins in purple cabbage.
