欧李红仁核桃粕红枣复合果粉加工工艺研究

摘要 欧李富含钙元素,核桃粕富含多种蛋白及微量元素,红枣维生素含量高并含有丰富的多糖,将三者复合,有望生产出营养互补、感官俱佳的高级饮品。以欧李、红枣、红仁核桃粕为原料,按10∶10∶1的比例混合浆液,利用喷雾干燥方式生产复合果粉,并对其工艺参数进行优化。对送风温度、进料泵速、转子流量计高度及浆液固形物含量4个因素进行单因素试验和响应面分析,结果表明,利用喷雾干燥法生产欧李红仁核桃粕红枣复合果粉的最优条件为送风温度183℃、进料泵速5.00 mL/min、转子流量计高度50 mm、浆液固形物含量7%。在该条件下生产的复合果粉的集粉率为59.50%,休止角为40°,堆积密度为0.23 g/mL,水分含量为1.5%,溶解度达51.3%。在该工艺参数下生产的复合果粉营养互补,口感上佳,集粉率高,物理学特性优良。 Cerasus humilis is rich in calcium,walnut meal is rich in protein and a variety of minerals,and jujube is high in vitamins and rich in polysaccharides.Combining the three,it is expected to produce high-end drinks with complementary nutrition and excellent sensory.Using Prunus humilis,jujube and walnut meal as raw materials,the compound fruit powder was produced by spray drying method in the proportion of 10∶10∶1,the process parameters were optimized by single factor test and response surface optimization test.The results show that the optimal conditions for spray drying process of the cerasus humilis walnut meal and jujube composite fruit powder are:inlet air temperature is 183℃,feed flow rate is 5.00 mL/min,rotameter height is 50 mm,slurry soluble solid content is 7%.Under these conditions,the produced solid beverage has a powder collection rate of 59.50%,an angle of repose of 40°,a bulk density of 0.23 g/mL,and a moisture content of 1.5%.The composite fruit powder produced under the process parameters has complementary nutrition,good taste,high powder collection rate and excellent physical properties.
