摘要
大蒜是一种重要的药食同源植物,在我国具有悠久的栽培历史。本文对大蒜中的活性物质及其特征、大蒜素等活性物质在杀菌、抗氧化、防治心血管疾病以及抗肿瘤等方面的作用机制和应用进行了综述,以期为大蒜的高附加值利用及大蒜素类药物的开发提供借鉴。
Garlic is an important homologous plant of medicine and food,which has a long history of cultivation in China.In this paper,the active substances in garlic and their characteristics,the mechanism and application of allicin and other active substances in sterilization,anti-oxidation,prevention and treatment of cardiovascular diseases,and anti-tumor were reviewed,with a view to providing reference for the high value-added utilization of garlic and the development of allicin-related drugs.
