“现代发酵技术”课程案例库建设与实践

摘要 “现代发酵技术”是食品科学与工程、生物与医药(发酵工程、酿酒工程方向)专业研究生重要的学位课程。将案例教学模式引入该课程,主要包括案例内容模块设计、案例库建设、案例库教学实践、网络平台建设4个步骤。在教学案例库设置中根据学校生物工程学院主要研究领域确定了包括食品微生物生态、食品微生物胁迫机理、益生菌相关、发酵过程优化、代谢工程与合成生物学、食品微生物系统生物学六大模块。通过教学实践,发现案例库教学在激发学生学习兴趣、提高分析和解决问题能力、增强师生互动等方面具有明显效果。 Modern Fermentation Technology is an important degree course for postgraduates majoring in food science and engineering,biology and medicine(fermentation engineering,brewing engineering).We introduced case teaching mode into this course,which including four steps:design of case content,construction of case base,teaching practice of case base,and construction of network platform.In the process of teaching case base construction,six modules were chosen according to the main research fields of the School of Bioengineering,including food microbial ecology,food microbial stress mechanism,probiotics,fermentation process optimization,metabolic engineering and synthetic biology,and food microbial system biology.Through teaching practice,it was found that case database teaching had obvious effects on stimulating graduate students'interest in learning,improving their ability to analyze and solve problems,and enhancing the interaction between teachers and students.
