低场核磁在食品应用中的研究进展

摘要 低场核磁共振(LF-NMR)技术是一种以原子核发生磁性共振为基础的弛豫谱分析技术,是可用于食品检测的一种方法。LF-NMR技术具有检测分析速度快、无损检测、样品处理简便、设备简单等优点。可应用于食品品质检测、掺假鉴别及食品内部质构特性分析,以肉制品、粮油制品、乳制品为例,综述低场核磁共振技术在食品领域的应用。 Low-field nuclear magnetic resonance(LF-NMR)technology is a relaxation spectroscopy analysis technology based on magnetic resonance of atomic nuclei,which has been widely used in the field of food safety testing.LF-NMR technology has the advantages of fast detection and analysis speed,high efficiency,lossless sample,simple processing,and simple testing equipment.Can be applied to food quality detection,adulteration identification and food internal texture characteristics analysis,this paper took meat products,grain and oil products,dairy products as an example,reviewed the application of low-field MRI technology in the field of food.
