摘要
将新鲜的牦牛乳置于新研发的牦牛乳冷储罐中冷藏,检测不同时间内牦牛乳的温度、酸度、菌落总数变化,并与传统不锈钢桶保藏进行对照。结果表明,冷储罐中保藏的牦牛乳在60 min内从22℃冷却至4℃;冷藏3 d后牦牛乳的菌落总数为9.3×10^(5) CFU/mL,酸度为17.9°T,符合现行生乳收购标准;冷藏5 d后进行酒精试验和冷藏6 d后进行煮沸试验,未出现絮状沉淀。新研发的牦牛乳冷储罐存储性能优于不锈钢桶的存储性能,具有一定的推广价值。
Fresh yak milk was stored in a newly developed yak milk cold storage tank,and the temperature,acidity,and total amount of bacterial colonies of yak milk were detected at different times,and compared with traditional stainless steel barrels.The results showed that the yak milk stored in the cold storage tank was cooled from 22℃ to 4℃ within 60 min;After refrigerated for 3 days,the total amount of bacterial colonies in yak milk was 9.3×10^(5) CFU/mL,and the acidity was 17.9°T,which met the acquisition standards of current raw milk.Alcohol test was carried out after 5 days of refrigeration and boiling test was carried out after 6 days of refrigeration,no flocculent precipitation appeared.Tests have shown that the storage performance of the newly developed yak milk cold storage tank is better than that of stainless steel barrels,which has a certain promotion value.
