Detection and analysis of pathogenic bacteria contamination in meat and meat products in Tai'an city,Shandong province from 2019 to 2021

摘要 目的分析2019-2021年山东省泰安市肉与肉制品中主要致病菌的污染状况,为预防和控制食源性疾病提供依据。方法2019-2021年采集山东省泰安市市售的肉与肉制品4类共240份样本,依据《食品安全国家标准食品微生物学检验》及《山东省食品污染物和有害因素风险监测工作手册》系列方法,对肉与肉制品样本进行沙门菌、单核细胞增生李斯特菌、空肠弯曲菌、产气荚膜梭菌、小肠结肠炎耶尔森菌的分离培养和鉴定。结果240份样本检出致病菌阳性样本54份,阳性样本检出率为22.50%;检出58株致病菌,致病菌检出率为24.17%。4类样品中以生畜肉的阳性样本率最高(28.75%),其次为生禽肉(28.33%)、调理肉制品(22.22%)、熟肉制品(7.27%)。5种致病菌以沙门菌的检出率最高(10.83%),其次为单核细胞增生李斯特菌(8.33%)、产气荚膜梭菌(2.08%)、小肠结肠炎耶尔森菌(1.67%)、空肠弯曲菌(1.25%)。结论2019-2021年山东省泰安市肉与肉制品存在食源性致病菌污染,特别是生畜肉污染较为严重,沙门菌是主要污染菌。 Objective To analyze the pollution status of main pathogenic bacteria in meat and meat products in Tai'an city from 2019to 2021,so as to provide scientific basis for the prevention and control of foodborne diseases.Methods According to the National Standard of the People's Republic of China Microbiological Examination of Food Hygiene and National Handbook For Risk Monitoring of Food Pollutants And Harmful Factors,the Salmonella,Listeria monocytogenes,Campylobacter jejuni,Clostridium perfringens,Yersinia enterocolitica were isolated and identified from meat and meat products of commercially Tai'an city.Results From 2019to 2021,a total of 240samples of 4categories were collected and tested,and 54samples were positive for pathogenic bacteria,and the detection rate of positive samples was 22.50%.Fifty-eight strains of pathogenic bacteria were detected,and the detection rate of pathogenic bacteria was 24.17%.Among the 4types of meat and meat products samples,raw meat had the highest positive sample rate(28.75%),followed by raw poultry meat(28.33%),prepared meat products(22.22%)and cooked meat products(7.27%).The detection rate of Salmonella was the highest(10.83%),followed by Listeria monocytogenes(8.33%),Clostridium perfringens(2.08%),Yersinia enterocolitica(1.67%),and Campylobacter jejuni(1.25%).Conclusion The meat and meat products in Tai'an city are contaminated by foodborne pathogens,especially the meat of raw animals,and Salmonellais the main contaminating bacteria.
