摘要
为从清香型酒曲中分离筛选出高产乙酸乙酯的酵母菌并找到较适宜的产酯条件,本研究利用传统培养的方法筛选出12株酵母菌,利用高粱汁液态发酵初筛酵母菌,对菌株发酵液中乙酸乙酯的含量进行检测,得到1株具有高产乙酸乙酯特性的酵母菌株Y46,鉴定为异常毕赤酵母(Pichia anomala),该菌株在36 h达到最大生长量,在发酵12 h时乙酸乙酯的产量达到最大值,在YPD培养液中乙酸乙酯产量为1032.22 mg/L,在高粱培养基中产量为1123.63 mg/L。
In order to isolate and screen yeast strains with high yield of ethyl acetate from Qingxiang Daqu,and to find their suitable ester-producing conditions,12 yeast strains were screened out by traditional culture method.The yeast strains was screened by sorghum juice fermentation,and the ethyl acetate content in the fermentation liquid was detected.Finally,a yeast strain(Y46,Pichia anomala)with high yield of ethyl acetate was obtained.Y46 reached the maximum growth rate at 36 h,and reached the maximum yield of ethyl acetate at 12 h.The yield of ethyl acetate was 1032.22 mg/L in YPD medium,and 1123.63 mg/L in sorghum medium.
