摘要
生物传感器作为一种通过化学作用将物理信息转换成电信号的传感器件,其特有的探测技术和特性,被广泛用于食品分析。它能对食物中的葡萄糖、微生物、霉菌毒素、农兽残等进行快速、准确地测定,为食物的安全性提供了技术保证。基于此,本文对生物传感器检测原理与新技术展开了深入的研究,并对其在食品检测中的具体应用有了一定的认识,为今后在食品安全检测中的应用提供借鉴,从而保证食品的安全。
As a sensor that converts physical information into electrical signals through chemical action,biosensor is widely used in food analysis because of its unique detection technology and characteristics.It can quickly and accurately determine the glucose,microorganisms,mycotoxins,agricultural and animal residues in the food,which provides a technical guarantee for the safety of the food.Based on this,this paper carries out an in-depth research on the biosensor detection principle and new technology,and has a certain understanding of its specific application in food testing,so as to provide a reference for the future application in food safety testing,so as to ensure the safety of food.
