昆虫食品与日本饮食

摘要 从日本消费者对昆虫食品的消费状况入手,从多个角度刨析昆虫食品对日本饮食系统的影响。通过信息整理,梳理日本昆虫食品的营养组成特点及其与食品品质之间的关系。通过考察日本人群对昆虫食品的接受状况,探索日本食用昆虫的市场消费特征以及消费心理。随着民众对昆虫食品认知度的上升,更多的日本人出于合理利用资源以及环境保护方面的考虑,希望更多的昆虫食品或者食品配料被开发应用。日本食品业界在顺应这一趋势,积极推广新型昆虫食品与食品配料。 This paper starts with the consumption of insect food by Japanese consumers,and analyzes the impact of insect food on the Japanese food system from multiple perspectives.Through information sorting,the nutritional composition characteristics of Japanese insect food and its relationship with food quality are sorted out.By examining the acceptance of insect food by Japanese people,the market consumption characteristics and consumption psychology of Japanese edible insects are explored.With the increase of public awareness of insect food,more Japanese hope that more insect food or food ingredients will be developed and applied out of the consideration of rational use of resources and environmental protection.The Japanese food industry is following this trend and actively promoting new insect foods and food ingredients.
