思维导图在“食品化学”课程教学中的应用

摘要 “食品化学”是食品专业的重要核心课程,由于课程存在教学内容多、课时少、难度大等现实问题,学生在学习中面临知识量多、难度大、兴趣低等困难。如何引导学生梳理相关知识点之间内在的逻辑关联,提高学生学习效率,并促进学生对知识的整合与应用能力,成为“食品化学”课程教和学过程中面临的巨大挑战。文章阐述了“食品化学”课程教学中应用思维导图引导学生进行有效课后复习的实践经验,提出利用思维导图在课后回顾组织教学活动,以期为促进“食品化学”教学效果提供指导,为课程学习提供参考。 “Food Chemistry” is the core course of food specialty.The teaching of this course is faced with difficulties such as too much content and less class hours,and students are faced with problems such as too much knowledge to learn,difficulty to remember,and low interest in learning.How to guide students to sort out the internal logical relationship between related knowledge points,to improve students' learning efficiency,so as to promote students' integration and application of knowledge,is the huge challenge for both teaching and learning.The practical experience of applying mind map in the teaching of “Food Chemistry” to guide students to conduct effective after-class review and case discussion is shared.Mind map is proposed to use to organize teaching activities from after-class review,which is aimed to offer guidance to promote the “Food Chemistry” teaching,as well as provide reference for the course study.
