摘要
了解某铁路地区职工食堂消毒管理现状,为今后更好的提高职工食堂消毒管理水平、保障食品安全提供依据。依据相关法律法规、卫生标准等对某铁路地区管辖职工食堂开展消毒管理现状调查,结果显示,调查的69家职工食堂均建立了包括清洗消毒、食堂环境通风消毒、清洗消毒培训、洗消产品索证索票和重点部位预防性消毒的卫生管理制度并加以落实,但在食堂消毒记录完整性、洗涤剂消毒剂规范存储及采购索证索票等方面仍需加强。针对存在问题进行分析,提出落实食品安全主体责任、加强食堂消毒管理、发挥各方协同作用和建立消毒管理体系等加强管理的建议。
To understand the status of disinfection management of staff canteen in a railway area,and to provide basis for improving the disinfection management level of staff canteen and ensuring food safety in the future.According to relevant laws,regulations and hygiene standards,the disinfection management status of staff canteens under the jurisdiction of the railway area was investigated.The results show that 69 staff canteens surveyed have established and implemented hygiene management systems including cleaning and disinfection,ventilation and disinfection of canteen environment,cleaning and disinfection training,claiming certificates and tickets for decontamination products and preventive disinfection of key parts.It is still necessary to strengthen the integrity of canteen disinfection records,standardized storage of detergents and disinfectants,and purchasing certificates and tickets.In view of the existing problems,this paper puts forward some suggestions to strengthen management,namely,implementing the main responsibility of food safety,strengthening the disinfection management of canteens,exerting the synergy of all parties and establishing disinfection management system.
