梨干品质评价及适宜制干品种(系)的筛选

摘要 为筛选出适宜制干的梨品种(系),延伸产业链,促进梨产业发展。以44个品种(系)的梨果为试验材料,研究了梨果品质对出干率的影响;采用热风干燥法对梨果制干,根据外观、酸甜度、石细胞、软硬度和香气等感官指标对梨干品质进行评分,结合梨果出干率进行综合评定,筛选出适宜制干的梨品种(系)。结果表明,44个梨品种(系)梨果出干率在9.60%~15.46%之间,可溶性固形物含量与出干率之间呈极显著正相关,达0.58;梨果制干品质综合得分在62.29~85.38之间,金光分值最高。研究筛选出金光、黄金梨、041114、冀蜜、041894、AD051923、大果水晶、0411125、冠玉、SJ051105和041901为适宜制干的梨品种(系)。 In order to screen out suitable pear varieties(lines)for drying,extend the industrial chain and promote the development of the pear industry.Using 44 varieties(lines)of pear fruit as test materials,the effect of pear fruit quality on the drying rate was studied.Hot air drying method was used to dry pear fruit,and the quality of pear dried was scored according to the appearance,sweetness and sour degree,sclereid,hardness and aroma and other sensory indicators,and combined with the drying rate of pear fruit,comprehensive evaluation was made,and the pear varieties(lines)suitable for drying were screened out.The results showed that the dry rate of 44 pear varieties(lines)ranged from 9.60%to 15.46%,and there was a very significant positive correlation between soluble solids and dry rate,reaching 0.58;the comprehensive score of pear dry quality was between 62.29-85.38,the Jinguang score is the highest.Jinguang,Huangjin Pear,041114,Jimi,041894,AD051923,Daguo Crystal,0411125,Guanyu,SJ051105and 041901 were pear varieties(lines)suitable for drying.
