一种蓝莓味叶黄素酯饮品的研制

摘要 本文以蓝莓浓缩汁、叶黄素酯为主要原料,添加糖浆、维生素C、饮用水等经过特定工艺研制出一款具有保护视力、补充维生素作用的饮品。通过单因素和正交试验,以感官评分为主要评价指标,确定了蓝莓味叶黄素酯饮品的最佳配方为蓝莓浓缩汁16%、叶黄素酯16 mg·kg^(-1)、维生素C 300 mg·kg^(-1),配合其他辅料,制备成具有蓝莓气味、颜色均一呈酒红色、口感润滑的复合饮料。随着手机和电脑的普及,人们易用眼过度,本研究紧跟市场热点,研制出一款具有保护视力功效的复合饮品,合理利用蓝莓、叶黄素酯的营养成分及其保健功能,为今后蓝莓果蔬的利用和叶黄素酯相关产品的拓展提供一定的指导与借鉴。 In this paper,blueberry juice concentrate,lutein ester as the main raw materials,adding syrup,vitamin C,drinking water and other special processes to develop a drink with the function of protecting eyesight and supplementing vitamins.Through single factor and orthogonal experiments,with sensory score as the main evaluation index,the best formula of blueberry flavor lutein ester drink was determined as blueberry concentrated juice 16%,lutein ester 16 mg·kg^(-1),vitamin C 300 mg·kg^(-1).With other auxiliary materials,a compound drink with blueberry flavor,uniform color,wine red,and smooth taste was prepared.With the popularity of mobile phones and computers,people are easy to overuse their eyes.This research closely follows the market hot spot and develops a compound drink with the effect of protecting eyesight.It makes rational use of the nutritional components of blueberry and lutein esters and their health functions,providing some guidance and reference for the future use of blueberry fruits and vegetables and the expansion of lutein ester related products.
