摘要 葡甘聚糖是一种优良的膳食纤维,具有不被吸收,自身不含热量,容易有饱腹感,能减少和延缓葡萄糖的吸收等优点。随着现代化水平的提高,人们对绿色无公害产品越来越青睐,魔芋葡甘聚糖的需求量越来越大,应用范围越来越广。魔芋葡甘聚糖其特殊的单糖组成和分子结构决定其具有特殊的理化性质。本文主要阐述了葡甘聚糖水溶性和保水性、增稠性、凝胶性、成膜性、衍生性等理化性质,以及葡甘聚糖在食品、工业、医药制品等方面的开发研究,并对其发展前景进行展望。 Glucomannan is an excellent dietary fiber that is not absorbed,has no calories,is prone to feeling full,and can reduce or delay the absorption of glucose.With the improvement of modernization level,people are more and more interested in green pollution-free products,and the demand of konjac glucomannan is more and more large,and the application range is more and more wide.Konjac glucomannan has special physical and chemical properties due to its special monosaccharide composition and molecular structure.This paper mainly describes the water solubility and water retention,thickening,gelation,film forming,derivatives and other physical and chemical properties of glucomannan,as well as the development and research of glucomannan in food,industry,medical products and other aspects,and prospects for its development.
