柯乐猪与大白猪胴体性状、肉质性状研究及相关性分析

Study and Correlation Analysis on Carcass and Meat Quality Between Kole Pig and Large White Pig

为探究地方品种柯乐猪与引进品种大白猪的种质特性,试验从2个品种中分别选择19头和12头进行胴体及肉质性状等相关指标的测定,并进行性状间相关性分析。相关性分析表明,柯乐猪和大白猪的宰前活重与胴体重均极显著正相关(P<0.01),瘦肉率与宰前活重均显著负相关(P<0.05);柯乐猪眼肌的L_(45min*)与b_(45min*)呈极显著正相关(r=0.701,P<0.01),大白猪眼肌的L_(45min*)与b_(45min*)呈显著正相关(r=0.671,P<0.05)。结果表明,在相同饲养环境条件下,大白猪的胴体性能优于柯乐猪,但柯乐猪肉质优于大白猪,性状间也存在一定的相关性。

In order to explore the germplasm characteristics of local breed Kole pigs and introduced breed Large white pigs,19 and 12 pigs were selected from the two breeds respectively to determine the carcass and meat quality traits and other related indicators,and the correlation between traits was analyzed.The correlation analysis showed that pre-slaughter live weight was significantly positively correlated with carcass weight(P<0.01),and lean meat percentage was significantly negatively correlated with pre-slaughter live weight(P<0.05)for Kole and Large White pigs.There was a significant positive correlation between L_(45min*)and b_(45min*)of Kole pig longissimus dorsi(r=0.701,P<0.01),and there was a significant positive correlation between L_(45min*)and b_(45min*)of large white pig longissimus dorsi(r=0.671,P<0.05).The results showed that the carcass performance of Large White pigs was better than that of Kole pigs under the same feeding environment,but the pork quality of Kole pigs was better than that of Large White pigs,and there was a certain correlation between the traits.
