摘要
大曲作为浓香型白酒酿造过程的糖化发酵剂,以小麦为主要原料,在自然开放的条件下培育而制成的粗酶制剂。大曲对浓香型白酒的风格、产量和品质都具有重要的影响。当前,发展架子曲是解决白酒企业用工成本和制曲环境的重要课题。根据企业生产实践,分析并探讨了影响浓香型大曲架子曲质量的相关因素,对提高架子曲质量的改进措施及其效果进行了对比,并总结了架子曲培养的关键工艺控制点,以其为架子曲的培养和应用提供参考。
Daqu,as the saccharification starter in Nongxiangxing baijiu brewing process,which is a crude enzyme preparation cultivated with wheat as the main raw material in natural and open conditions.Daqu has an important influences on the style,yield and quality of Nongxiangxing baijiu.At present,the development of Shelf-daqu is an important issue to solve the labor cost and daqu making environment in baijiu enterprises.Based on the production practice of enterprises,this paper analyzed and discussesed the relevant factors which affecting the quality of Nongxiangxing Shelf-daqu,compares the improvement measures and their effects to improve the quality of Shelf-daqu,and summarizes the key process control points of Shelf-daqu cultivation,to provide reference for the cultivation and application of Shelf-daqu cultivation.
