摘要
蚕豆是仅次于大豆和豌豆的第三大豆类,富含蛋白质、碳水化合物、维生素、矿物质等营养物质。同时,蚕豆中也含有多种非营养性化合物,并且同一种非营养性化合物对动物健康和生产性能的影响存在有益或不利的两面性,这种活性作用的两面性存在强烈的剂量依赖性。本文主要综述了蚕豆中几种代表性非营养性化合物生物学功能及其对传统加工处理的响应规律,为平衡蚕豆非营养性化合物活性作用的两面性、促进蚕豆资源在畜禽生产中的安全和高效利用提供科学参考。
Faba bean is the third largest bean after soybeans and peas,which is rich in protein,carbohydrates,vitamins,minerals and other nutrients.At the same time,faba bean also contains a variety of non-nutritive compounds,and the effects of the same non-nutritive compound on animal health and production performance are beneficial or unfavorable,and the two sides of this activity are strongly dose-dependent.This paper mainly reviews the biological functions of several representative non-nutritive compounds in faba bean and their response to traditional processing,and provides scientific reference for balancing the two sides of the activity of non-nutritional compounds in broad bean and promoting the safe and efficient utilization of broad bean resources in animal production.
