呛蟹、腐乳中的11种生物胺监测结果分析

摘要 目的通过分析台州市售的不同品牌或同品牌不同系列呛蟹和腐乳中组胺、色胺、胍基丁胺、章鱼胺、尸胺、苯乙胺、亚精胺、腐胺、酪胺、精胺、5-羟色胺的监测含量,了解此二类食品因生物胺带来的健康危害。方法应用液质联用法测定样本生物胺含量,再按样品类别统计分析各生物胺含量值的分布、组间差异,用Excel分析各生物胺检出率。结果除色胺、苯乙胺、精胺、亚精胺外,呛蟹中其余7种生物胺均100%检出;除色胺、胍基丁胺、章鱼胺、5-羟色胺外,腐乳中其余7种生物胺均100%检出;呛蟹中检出高含量的是尸胺、腐胺、章鱼胺、胍基丁胺;腐乳中检出高含量的是腐胺、组胺、酪胺、色胺。结论少数呛蟹、腐乳产品中存在生物胺类化合物总含量比较高的现象,并且食用腐乳时有组胺轻微中毒的风险。同时摄入亚硝酸盐、酒精还能增加生物胺对人体的健康伤害。改善膳食行为,例如减少呛蟹、腐乳摄入量,是很有必要的。 Objective This paper aims to monitor and analyze the contents of histamine,tryptamine,agmatine,octopamine,cadaverine,phenylethylamine,spermidine,putrescine,tyramine,spermine and 5-hydroxytryptamine in salting Portunus tritu⁃berculatus and sufu with different brands or different series of the same brand in Taizhou,so as to understand the hazards of biogenic amines in these two kinds of foods.Methods The content of biogenic amines in samples was determined by an ultra-performance liquid chromatography-tandem mass spectrometry method.Then,the distribution of biogenic amines and the difference between groups were analyzed statistically according to the categories of samples,and the detection rate of biogenic amines was analyzed by Excel.Results Except tryptamine,phenylethylamine,spermine and spermidine,the detection rate of other 7 biogenic amines was 100%in samples of salting Portunus trituberculatus.Except tryptamine,agmatine,octopamine and 5-hydroxytryptamine,the detection rate of other 7 biogenic amines was 100%in samples of sufu.High contents of cadaverine,putrescine,octopamine and agmatine were detected in salting Portunus trituberculatus.High contents of putrescine,histamine,tyramine and tryptamine were detected in sufu.Conclusion Relatively high content of biogenic amines was detected in a small number of products of salting Portunus trituberculatus and sufu.There was a risk of slight histamine poisoning when intaking sufu.Meanwhile,the intake of nitrite and alcohol could increase the harm of biogenic amine to human health.It was necessary to improve the dietary behavior,such as reducing the intake of salting Portunus trituberculatus and sufu.
