香蕉冷藏运输品质动态监测与实验分析

摘要 为了分析不同物流流程对生鲜易腐食品品质的影响,研究以香蕉为研究对象,通过实验探究全程冷链、全程常温、前端断链及后端断链等不同运输条件下,香蕉感官评价、色差、失重率、硬度、pH值、可溶性固形物含量等品质指标的变化情况。研究表明,不同环节的温度波动均会对香蕉的品质造成不同程度的负面影响,而全程冷链运输最大限度保持香蕉的品质;其中,对香蕉果肉品质的损伤最大的全程常温,而对果皮品质的损伤最大的是前端断链。 In order to analyze the influence of different circulation modes on the quality of perishable food,this paper took banana as the research object and explored its change of quality indexes such as sensory evaluation,color dfference,weight loss rate,hardness,pH value and soluble solid content under four circulation scenarios:cold chain,without precooling,ambient temperature sales and room temperature circulation.The results showed that temperature fluctuations in different links had different negative impact on the quality of banana,while the cold chain circulation can maximize the quality of banana;Moreover,the greatest damage to banana pulp quality was the room temperature circulation scenario,and the most damage to peel quality was the without pre-cooling scenario.
