摘要
为明确影响烤烟感官品质的关键外观特征指标,采用偏最小二乘回归等方法对6个产区共计265份烟叶样品的外观特征与其感官品质间的关系进行分析。结果表明:外观特征指标中仅上部叶样品油润感分值服从正态分布,其他外观特征指标分值均未通过正态性检验;中部叶外观指标除身份外均与总体感官品质在0.1%水平显著正相关;上部叶颜色纯正度、成熟度、叶片结构、光泽度、柔软度、油润感与总体感官品质在0.1%水平显著正相关,身份与总体感官品质在0.1%水平显著负相关;油润感、柔软度、叶片结构3项外观特征对中部叶香气质和总体感官品质的累计贡献率分别为49.62%和51.07%,对上部叶香气量和总体感官品质的累计贡献率分别为43.19%和44.30%。叶片结构、柔软度和油润感是影响中、上部叶感官品质的关键指标,可在烟叶原料的工业分选研究中进一步应用。
In order to clarify the key appearance factors affecting sensory quality of flue-cured tobacco,265 middle and upper leaf samples with different appearance factors were collected from 6 planting areas.(Xiangcheng and Lingbao in Henan,Guiyang in Hunan,Shaowu in Fujian,Qilin in Yunnan and Qianjiang in Chongqing).The appearance characteristics and their relationship of sensory quality were analyzed using Spearman correlation and partial least squares regression.The results showed that appearance characteristics data except oil of upper leaves did not conform to the normal distribution.Appearance quality scores of middle leaf samples except leaf body had significant positive correlation with sensory quality total scores at the level of 0.1%.(P<0.001).The color purity,maturity,leaf structure,luster,softness and oil of upper leaf samples had significant positive correlation with sensory quality total scores at the level of 0.1%.(P<0.001).The body of upper leaves had significant negative correlation with sensory quality total scores at the level of 0.1%.(P<0.001).(3)The cumulative contribution rate of oil,softness and leaf structure to aroma quality and total sensory quality of middle leaves accounted for 49.62%and 51.07%respectively.The cumulative contribution rate of these 3 appearance characteristics(oil,softness and leaf structure)to aroma quantity and total sensory quality of upper leaves accounted for 43.19%and 44.30%respectively.Leaf structure,softness and leaf oil were the key factors affecting the sensory quality of the upper and middle leaves,which could be applied to industrial grading research.
