摘要
由于颗粒乳化剂在制备皮克林乳液的过程中无需添加化学表面活性剂或其他助剂,所以该乳液的安全性好并且稳定性高,近些年来吸引了国内外学者的广泛关注。传统的无机来源颗粒已被证明可作为颗粒乳化剂制备皮克林乳液,然而其不可降解及生物不相容的特性限制了其应用范围。与之相反,生物基来源颗粒可弥补无机颗粒在应用过程中存在的弊端,同时表现出较强的“可塑”性,可应用于食品及药物递送等领域。本文综述了常见生物基来源颗粒乳化剂的研究进展,提出了生物基颗粒乳化剂的发展方向,对皮克林乳液的制备与应用具有一定的指导意义。
Because the particle emulsifier does not need to add chemical surfactants or other additives in the process of preparing pickering emulsion,the emulsion has good safety and high stability,and has attracted extensive attention from scholars at home and abroad in recent years.Traditional inorganic particles have been shown to be useful as particle emulsifiers for the preparation of pickering emulsions,but their non-degradable and bioincompatible properties limit their application.In contrast,bio-based particles can make up for the drawbacks of inorganic particles in the application process,while showing strong“plasticity”and applied in food and drug delivery fields.In this paper,the research progress of biobased particle emulsifiers is reviewed,and the development direction of bio-based particle emulsifiers is proposed,which has certain guiding significance for the preparation and application of pickering emulsion.
