德氏乳杆菌的益生功能及其在发酵食品中的应用

摘要 德氏乳杆菌是最具经济价值的同型发酵乳酸菌种之一,具有良好的发酵性能和益生功能,在维持畜禽肠道健康、促生长、改善肉品质等方面具有重要作用,被广泛应用于动物和食品发酵生产中。本文介绍了德氏乳杆菌的免疫调节、调节血压、抑制致病菌、促进营养物质吸收和减轻肠道炎症等益生功能,对德氏乳杆菌在发酵乳制品、发酵肉制品、发酵果蔬汁、发酵酒中的应用研究进行综述,以期从传统发酵食品中分离筛选益生特性较好的德氏乳杆菌,进一步探究其对人体的益生功能及作用机制,研发更多功能性食品。 Lactobacillus delbrueckii is one of the most economically valuable homotypic lactic acid bacteria,with good fermentation performance and probiotic functions.It plays an important role in maintaining intestinal health,promoting growth,and improving meat quality in livestock and poultry,and is widely used in animal and food fermentation production.This article introduces the prebiotic functions of Lactobacillus delbrueckii,including immune regulation,blood pressure regulation,inhibition of pathogenic bacteria,promotion of nutrient absorption,and reduction of intestinal inflammation.The application research of Lactobacillus delbrueckii in fermented dairy products,fermented meat products,fermented fruit and vegetable juices,and fermented wine is reviewed in order to isolate and screen Lactobacillus delbrueckii with good prebiotic characteristics from traditional fermented foods,and further explore its prebiotic function and mechanism of action on the human body,develop more functional foods.
