响应面优化嗜酸乳杆菌微胶囊制备工艺的研究

摘要 试验旨在增强嗜酸乳杆菌(Lactobacillus acidophilus)的抗逆性,提高其经胃肠道后的存活率。试验利用响应面试验对嗜酸乳杆菌微胶囊的制备工艺进行优化。结果显示,嗜酸乳杆菌微胶囊制备的最佳工艺条件为海藻酸钠(SA)质量分数3.0%、聚乙烯醇(PVA)质量分数2.5%、固定化时间2 h。在此条件下微胶囊包埋率达到85.7%,在模拟胃液中的存活率达到70.1%,比未经微胶囊包埋的菌株存活率提高了167.6%。研究表明,制备出的微胶囊能够在胃酸环境下对嗜酸乳杆菌起到很好的保护作用。 The study was aimed to enhance the stress resistance of Lactobacillus acidophilus and improve its survival rate after gastrointestinal passage.Response surface test was used to optimize the preparation process of Lactobacillus acidophilus microcapsules.The results showed that the optimum preparation conditions of Lactobacillus acidophilus microcapsules were as follows:SA mass fraction 3.0%,PVA mass fraction 2.5%,immobilization time 2 h.Under these conditions,the microencapsulated rate reached 85.7%,and the survival rate in simulated gastric juices reached 70.1%,which was 167.6%higher than that of the strains without microencapsulated.The study indicates that the prepared microcapsules provide excellent protection against Lactobacillus acidophilus in the presence of gastric acid.
