金属元素多为作物的非必需元素,可通过多种途径(土壤、水和大气等)和各种生物化学作用进入作物中。金属元素过量累积,不仅影响农产品的质量,更重要的是对农产品的食用安全造成威胁。硒(Se)为硫族非金属元素,在地壳中呈分散状态,丰度为0.05×10^(-6)。硒具有增强人体免疫功能、抗肿瘤和抗衰老等诸多生物学活性。硒是人体所必需的微量元素,可形成谷胱甘肽过氧化物酶,保护细胞组织,维持细胞膜的功能,起到抗氧化的作用,研究硒元素对人体健康和畜牧业的发展有重要作用。

Metal elements are mostly non essential elements in crops,which can enter crops through various pathways(soil,water,atmosphere,etc.)and various biochemical processes.Excessive accumulation of metal elements not only affects the quality of agricultural products,but more importantly poses a threat to the edible safety of agricultural products.Selenium(Se)is a non-metallic element of the sulfur group,present in a dispersed state in the crust,with an abundance of 0.05×10^(-6).Selenium has many biological activities such as enhancing human immune function,anti-tumor,and anti-aging.Selenium is an essential trace element for human body,which can form glutathione peroxidase,protect cell tissue,maintain the function of cell membrane,and play an antioxidant role,and studying selenium plays an important role in human health and the development of animal husbandry.
