摘要
为快速、准确地预测鸽肉在冷藏条件下的货架期,研究了鸽肉在贮藏温度为0、4、8、12℃下鸽肉的挥发性盐基氮(total volatile bas⁃ic nitrogen,TVB-N)、色度值和菌落总数的变化情况,再对各指标进行相关性分析,以TVB-N值为指标建立一级动力学模型,并通过阿伦尼乌斯(Arrhenius)方程对货架期进行了预测。结果表明:选择TVB-N作为关键因子所得预测模型方程为A=A0 exp(2.4026×10^(23) e^(-128061/RT) t),鸽肉在低温冷藏条件下的预测货架期与实测货架期的相对误差在±10%以内。由此可见,所得预测模型方程可用于预测鸽肉在贮藏温度0~12℃下的货架期。
In order to quickly and accurately predict the shelf life of pigeon meat under cold storage conditions,the changes of total volatile basic nitrogen(TVB⁃N),chromaticity value and total viable count of pigeon meat at the storage temperatures of 0,4,8 and 12℃were stud⁃ied.The correlation analysis of each index was made.The first⁃order kinetic model was established with TVB⁃N value as the index.And the shelf life was predicted by Arrhenius equation.The results showed that the prediction model equation obtained by selecting TVB⁃N as the key factor was A=A0 exp(2.4026×10^(23) e^(-128061/RT) t),and the relative error between the predicted shelf life and the measured shelf life of pigeon meat under cold storage conditions was within±10%.Therefore,the prediction model equation could be applied to predict the shelf life of pi⁃geon meat at the storage temperatures of 0-12℃.
