摘要 目的 建立玫瑰花水中挥发性成分的检测方法,对不同来源的玫瑰花水进行检测分析,评价玫瑰花水产品的质量现状。方法 样品经二氯甲烷提取、浓缩,采用气相色谱-串联质谱(GC-MS/MS)进行检测,运用保留指数、质谱标准谱库(NIST14)检索相结合的方法,结合文献资料,对不同来源玫瑰花水的香气成分进行鉴定。结果 所建方法能对玫瑰花水中的挥发性成分进行检测,共鉴定出51种香气成分,本法的精密度和重复性为:保留时间RSD<0.2%,峰面积RSD<4.2%。玫瑰花水的主要香气成分为芳樟醇、苯乙醇、α-松油醇、香茅醇、香叶醇、丁香酚及长链烷烃,3批玫瑰花水的主要香气成分总含量低于1%,缺少玫瑰的特征香气成分,7批玫瑰花水的主要香气成分总含量高于37%。结论 该方法操作简便、快捷,具有良好的重复性和精密度,可作为玫瑰花水挥发性成分的检测方法。玫瑰花水能以主要香气成分总含量为质量控制指标,且该类产品需加强质量控制及监督管理。 Objective To establish a method for detection of volatile components in rose water,analyze rose water from different sources,and evaluate the quality status of rose water products.Methods The samples were extracted and concentrated,then detected by gas chromatography-tandem mass spectrometry(GC-MS/MS).The aroma components of rose water from different sources were identified using a combination of retention index and mass spectrometry standard library(NIST14)retrieval,as well as literature review.Results The proposed method could detect the volatile components in rose water and 51 kinds of aroma components were identified.The results of repeatability and precision tests showed that the RSD of peak retention time was less than 0.2%,and the RSD of peak area was less than 4.2%.The main aroma components of rose water were linalool,phenylethanol,α-terpineol,citronellol,geraniol,eugenol,and long-chain alkanes.The total content of the main aroma components in 3 batches of rose water was less than 1%,lacking the characteristic aroma components of rose.The total content of the main aroma components in 7 batches of rose water was more than 37%.Conclusion The method is simple and rapid,and of good repeatability and precision.The total content of main aroma components can be used as the quality index of rose water,and the quality control and supervision of rose water need to be strengthened.
