浅析1份川西高原牦牛肌肉的成分特征

摘要 目的调查阿坝藏族羌族自治州标准化养殖出栏牦牛肉质指标含量特征及安全性。方法试验在牦牛产区随机抽检了1份牦牛肌肉样本相关指标,并进行了分析。结果样品EAA/TAA值为46.63%,EAA/NEAA值为87.37%;酸油酸含量为36.80%,不饱和脂肪酸相对含量为46.14%;样品中As、Pb、Cd、Cr含量低于限定值,未检出重金属Hg和各类药物残留。结论抽查的牦牛肉营养价值高且未受有害物质污染。 In order to explore the fleshy characteristics and safety of yak meat,we randomly sampled and analyzed the relevant indexes of one yak muscle sample.The results showed that the EAA/TAA value of the sample was 46.63%,and the EAA/NEAA value was 87.37%.The content of oleic acid was 36.80%and the relative content of unsaturated fatty acid was 46.14%.The contents of As,Pb,Cd and Cr in the samples were lower than the limit value,and no heavy metal Hg and various veterinary residues were detected.The results indicated that the sampled yak meat had high nutritional value and was not contaminated by harmful substances.
