摘要
为探讨壳聚糖复合涂膜技术对安顺农特产品蜂糖李的保鲜效果,利用不同浓度的壳聚糖为主剂,以食品级氯化锌为辅剂,制备复合涂膜溶液对蜂糖李进行保鲜效果研究,结果表明:复合涂膜处理能够有效延缓蜂糖李果实的可滴定酸含量、可溶性固形物含量、Vc含量和硬度的下降,且对蜂糖李的失重率、腐烂率的上升具有明显的抑制效果。其中,1.5%壳聚糖-氯化锌(1.5%CTS-ZnCl_(2))复合涂膜处理的延缓和抑制的效果尤为显著(p<0.05),能有效维持蜂糖李的果实品质。该研究为蜂糖李的绿色保鲜技术应用提供了参考和理论依据。
To explore the preservation effect of chitosan composite coating solution on honeycomb plums,different concentrations of chitosan were used as the main agent,and food-grade zinc chloride was used as the auxiliary agent to prepare composite coating solution for the preservation effect study on honeycomb plums.The results showed that the composite film treatment could effectively delay the decline of titratable acid content,sol-uble solids content,Vc content and hardness of plum fruits,and it also had a significant inhibition effect on the increase of weight loss and rotting rate of plums.Among them,the delayed and inhibited effects of 1.5%chitosan-zinc chloride(1.5%CTS-ZnCl_(2))composite coating treatment were particu-larly significant(p<0.05),which could effectively maintain the fruit quality of honeycomb plums.This study provides a reference and theoretical ba-sis for the application of green preservation technology of honeydew plum.
