湘西州“黄金茶”品质特征及生化成分比较分析 被引量:2

摘要 为了解湘西州域内“黄金茶”的品质特征,对选取域内8县(市)77份“黄金茶”绿茶样分别进行理化检测和感官审评。结果显示,湘西州域内“黄金茶”绿茶具有“香、绿、鲜、醇”的特征品质,‘保靖黄金茶1号’绿茶水浸出物、茶多酚、游离氨基酸、咖啡碱含量平均值分别为40.03%、18.70%、5.34%和3.52%,‘黄金茶2号’绿茶水浸出物、茶多酚、游离氨基酸、咖啡碱平均值分别为39.76%、17.93%、5.69%和3.95%;“黄金茶”的酚氨比主要集中在2.5~4.0,且酚氨比≤3.0时品质最优;儿茶素含量为7.72%~15.76%,儿茶素品质指数3.44~14.59,儿茶素品质指数≥7.0时品质较好;18种氨基酸总含量为2.19%~6.05%,其中茶氨酸含量最高可达2.59%。以高氨基酸、低酚氨比、合适的儿茶素品质指数为具体表现的内含物质综合作用形成了湘西“黄金茶”特征品质。 The golden tea has been widely planted in Xiangxi Prefecture,showing a very effective of getting rid in battle against poverty,For comprehensive response the characteristic quality of Huangjin Green Tea,77 tea samples from 8 counties and cities in Xiangxi prefecture were selected to study the relationship of characteristic quality,main biochemical components.The results showed that the characteristic quality of Xiangxi Huangjin Green Tea"fragrant,green,fresh and mellow".the average values of the extracts,tea polyphenols,free amino acids,and caffeine of Baojing Huangjin Tea No.1 were 40.03%,18.70%,5.34%,and 3.52%,respectively.The extracts,The average values of Huangjin Tea No.2 are 39.76%,17.93%,5.69%,and 3.95%,respectively.The main phenol-ammonia ratio of Huangjin Tea ranges from 2.5 to 4.0,and the quality is optimal when less than or equal to 3.0;the catechin content ranges from 7.72%to 15.76%,the catechin quality index was 3.44~14.59,and the quality was better when the index was≥7.0;the total content of 18 amino acids was 2.19%~6.05%,of which highest was 2.59%.The reasonable proportion of contained substances characterized by high amino acid,low phenol-to-ammonia ratio and suitable catechin quality index jointly formed the characteristic quality.
