2022年东营市食品风险微生物检测结果分析

摘要 目的:调查山东省东营市2022年食品风险微生物污染现状。方法:在东营市各县区超市、零售店、农贸市场、网购、批发市场、餐馆、集体食堂、快餐店、小吃店和街头摊点等场所进行随机抽样,对所抽样的食品进行微生物检测,包括沙门氏菌、单核细胞增生李斯特氏菌、副溶血性弧菌、蜡样芽孢杆菌、铜绿假单胞菌和克罗诺杆菌。结果:2022年共采集12类食品,270份样本,总检出率为9.3%。其中,沙门菌3株、单核细胞增生李斯特氏菌3株、副溶血性弧菌3株、蜡样芽孢杆菌8株、铜绿假单胞菌2株和克罗诺杆菌6株。生禽肉、即食生制动物性水产品(海产品和淡水产品)、即食烘焙麦片、饮用水、外卖配送餐和学生午餐中的致病菌检出率分别为20.0%、15.0%、15.9%、10.0%、18.8%和13.3%。结论:东营市食品存在不同程度的污染,生禽肉、即食生制动物性水产品(海产品和淡水产品)、即食烘焙麦片、直饮水、外卖配送餐和学生午餐具有较高的检出率,主要为沙门氏菌、单核细胞增生李斯特氏菌、副溶血性弧菌、蜡样芽孢杆菌、铜绿假单胞菌和克罗诺杆菌等病原体的污染。为了保证东营市食品安全,应当加强食品监管,保证食品的安全性。 Objective:To investigate the current status of microbial contamination of food risks in Dongying in 2022.Method:Random samples were taken from supermarkets,retail shops,farmers’markets,online shopping,wholesale markets,restaurants,collective canteens,fast food restaurants,snack bars,and street stalls in all counties of Dongying,and microbiological tests were conducted on the sampled foods.These included Salmonella,Listeria monocytogenes,Vibrio parahaemolyticus,Bacillus cereus,Pseudomonas aeruginosa,and Cronobacter.Result:A total of 270 samples were collected from 12 food groups in 2022,with a total detection rate of 9.3%.Among them,three strains of Salmonella,three strains of Listeria monocytogenes,three strains of Vibrio parahaemolyticus,eight strains of Bacillus cereus,two strains of Pseudomonas aeruginosa and six strains of Cronobacter were detected.The detection rates were 20.0%,15.0%,15.9%,10.0%,18.8%and 13.3%in raw poultry meat,ready-to-eat raw animal aquatic products(seafood and freshwater products),ready-to-eat baked cereals,drinking water,takeaway meals and school lunches,respectively.Conclusion:Raw poultry meat,ready-to-eat raw animal aquatic products(seafood and freshwater products),ready-to-eat baked cereals,drinking water,takeaway and delivery meals,and student lunches had high detection rates,with the main contaminants being Salmonella,Listeria monocytogenes,Vibrio parahaemolyticus,Bacillus cereus,Pseudomonas aeruginosa,and Cronobacter.In order to ensure food safety in Dongying city,food supervision should be strengthened to ensure food safety.
