植物乳杆菌对食品中常见毒素的抑制作用研究进展

摘要 植物乳杆菌对于食品中的多种毒素有抑制作用,包括黄曲霉毒素B1、展青霉素、赭曲霉毒素等真菌毒素,米酵菌酸、肠毒素等细菌毒素,以及亚硝酸盐和重金属等。本文梳理了食品中常见的几种毒素的种类,概述了植物乳杆菌对一些毒素的抑菌机制的研究进展,以期为进一步研究植物乳杆菌的抑制毒素的作用提供参考,为植物乳杆菌在食品工业中的应用提供理论基础。 Lactobacillus plantarum has an inhibitory effect on a variety of toxins in food,including aflatoxin B1,patulin,ochratoxin and other mycotoxins,bongkrek acid,enterotoxin and other bacterial toxins,as well as nitrite and heavy metals.In this paper,several types of common toxins in food were reviewed,and the research progress of antibacterial mechanism of Lactobacillus plantarum on some toxins was summarized,in order to provide reference for further study of the inhibitory effect of Lactobacillus plantarum on toxins,and provide theoretical basis for the application of Lactobacillus plantarum in food industry.
