贝类重金属检测方法及风险评估研究进展

Research progress on detection methods and risk assessment of heavy metals in shellfish

重金属污染已成为影响贝类及其加工产品质量与安全的重要因素之一。贝类具有滤食性特点,重金属在其体内富集以后难以自身排出或消化降解,易发生重金属超标问题。本文结合贝类重金属检测研究情况,对目前常用重金属含量检测方法、重金属污染指数评价方法和健康风险评价方法进行了系统地归纳和总结,并对未来的研究重点和方向进行了展望,以期为进一步推动我国贝类养殖、加工相关产业的高质量发展提供理论参考。

Heavy metal pollution has become one of the key factors affecting the quality and safety of aquatic products.Shellfish has the characteristic of filter feeding.Heavy metals are difficult to be excreted or digested and degraded after accumulating in the body,so the problem of excessive heavy metal in shellfish is easy to occur.The frequently-used detection methods of heavy metal content,evaluation methods of heavy metal pollution index and health risk evaluation methods were systematically generalized and summarized on the basis of related studies about shellfish heavy metal detection.It also prospected the future research focus and direction.This paper provides a theoretical reference for the high-quality development of shellfish aquaculture and processing related industries.
