摘要
目的:探讨PDCA循环对医院食品安全质量管理的影响。方法:平邑县人民医院膳食科于2022年7月起在食品安全质量管理中采用PDCA循环法,在实施前(2022年1—6月)与实施后(2022年7—12月)分别调查食堂就餐满意度、消费情况、食堂服务评分。结果:实施后,就餐环境、服务态度、食物口感、食品种类和营养搭配的满意度显著高于实施前(P <0.05)。实施后消费人数、消费人次比实施前增加,人均消费额比实施前降低。实施后食堂服务意识、安全意识、手卫生、操作规范和沟通能力评分显著高于实施前(P <0.05)。结论:PDCA循环应用于医院食品安全质量管理中可提升食堂就餐满意度,增加消费人数及消费次数,降低患者的消费负担,提高食堂服务水平,值得推广。
Objective:To explore the effect of PDCA cycle on hospital food safety and quality management.Method:The Board Department of Pingyi County People’s Hospital has adopted the PDCA cycle method in food safety and quality management since July 2022.Before the implementation(January-June 2022)and after the implementation(July-December 2022),the dining satisfaction,consumption situation and canteen service score were investigated respectively.Result:After the implementation,the satisfaction of dining environment,service attitude,food taste,food type and nutrition combination was significantly higher than that before the implementation(P<0.05).After the implementation,the number of consumers and the number of consumers increased,and the per capita consumption decreased compared with that before the implementation.After the implementation,the scores of canteen service consciousness,safety consciousness,hand hygiene,operation standard and communication ability were significantly higher than those before the implementation(P<0.05).Conclusion:The application of PDCA cycle in hospital food safety and quality management can improve the satisfaction of dining in the canteen,increase the number of consumers and consumption times,reduce the consumption burden of patients,and improve the service level of the canteen,which is worth promoting.
