摘要
多肽金属离子螯合物是指由蛋白水解制得的小分子多肽上的羧基、磷酸基、酰胺基和氨基酸等,经配位作用形成的生物活性物质,其具有生物利用率高、安全性高、生物活性高等优势。对近年来有关金属离子螯合物的制备、肽金属螯合肽的结构表征、酶水解产物的分离纯化、螯合肽的生物利用和螯合机理等方面的研究进行了综述,并指出了当前所面临的一些问题,以期对金属离子螯合物的研究提供新思路。
Peptide metal ion chelates refer to bioactive substances formed by the coordination of carboxyl,phosphate,amide,and amino acids on small molecule peptides obtained from protein hydrolysis.They have the advantages of high bioavailability,high safety,and high biological activity.This article provides a comprehensive review of recent research on the preparation of metal ion chelates,structural characterization of peptide metal chelating peptides,separation and purification of enzymatic hydrolysis products,biological utilization of chelating peptides,and chelating mechanisms.It also points out some current problems faced,in order to provide new ideas for the study of metal ion chelates.
