不同直径及黑曲霉对柚果总黄酮、柚皮苷、橙皮苷和野漆树苷含量的影响

Effects of Different Diameters and Aspergillus Niger on the Contents of Total Flavonoids, Naringin, Hesperidin and Rhoifolin in Pomelo Fruit

研究不同直径大小柚果中总黄酮、总酚、柚皮苷、橙皮苷和野漆树苷含量的变化及黑曲霉对柚果黄酮类成分的影响.无菌柚果接入黑曲霉,恒温恒湿培养下于不同时间点进行取样.采用紫外分光光度法和高效液相色谱法分别测定不同直径大小柚果及黑曲霉发酵后柚果中总黄酮、柚皮苷、橙皮苷和野漆树苷的含量.不同直径大小各柚果总黄酮、总酚和柚皮苷的含量随柚果直径的增大而下降.黑曲霉反接后,发酵组总黄酮、柚皮苷和野漆树苷含量呈下降趋势,橙皮苷含量先增后减,在发酵第36 h达到最高.柚果直径、黑曲霉发酵均对柚果总黄酮、柚皮苷、橙皮苷和野漆树苷有影响,为柚果合理利用提供参考价值.

To study the contents of total flavonoids,total phenols,naringin,hesperidin and rhoifolin in pomelo fruit with different diameters,and the effects of Aspergillus Niger on the flavonoids of pomelo fruit.Sterile pomelo fruit was exposed to Aspergillus Niger,and samples were taken at different time points under constant temperature and humidity.The contents of total flavonoids,naringin,hesperidin and rhoifolin in pomelo fruits with different diameters and fermented by Aspergillus Niger were determined by UV spectrophotometry and high performance liquid chromatography separately.The contents of total flavonoids,total phenols and naringin in different diameter of pomelo fruit decreased with the increase of pomelo fruit diameter.After Aspergillus Niger reverse grafting,the contents of total flavonoids,naringin and rhoifolin in fermentation group showed a downward trend,while the contents of hesperidin increased first and then decreased,reaching the highest value at 36 h of fermentation.The diameter of pomelo fruit and Aspergillus Niger fermentation all had effects on the total flavonoids,naringin,hesperidin and rhoifolin of pomelo fruit,which provided reference value for rational utilization of pomelo fruit.
