摘要
白酒产业是我国的传统酿造产业,随着现代科技的进步和科研水平的提升,白酒生产技术也在不断创新发展。清香型白酒作为我国白酒三大主流香型之一,其独特的口感和香味受到越来越多消费者的喜爱,市场份额逐年提升。为了更深入系统地了解清香型白酒,本文综述了近年清香型白酒在酿造微生物、酿造工艺、酒体风味物质、质量指标控制等方面的研究现状,并探究了清香型白酒技术的未来发展趋势。
Liquor industry is the traditional brewing industry in our country.With the progress of modern science and technology and the improvement of scientific research level,liquor production technology is constantly innovating and developing.Fen-flavor liquor is one of the three mainstream flavor types of liquor in my country.Its unique taste and aroma are favored by more and more consumers,and its market share is increasing year by year.In order to understand the Fenflavor liquor more deeply and systematically,the research status of Fen-flavor liquor in brewing microorganism,brewing technology,liquor flavor substance and quality detection technology were reviewed in this paper.
