摘要
怀山药作为河南道地药食两用资源性植物,具有健脾补肺、保肝固肾益精之功效。怀山药富含抗性淀粉,可用于改善食品的品质、口感和加工工艺。本文利用循环压热法制备了沙土及垆土怀山药抗性淀粉,并进行了结构分析和理化性质的比较,旨在为开发含科技附加值的怀山药农副产品提供理论基础。
Chinese yam,as a medicinal and edible plant in Henan,is well-known for strengthening and protecting the spleen,lungs,liver and kidneys.Chinese yam is rich in resistant starch,which can be used to improve the quality,taste and processing technology of food.In this paper,the resistant starch of Chinese yam in sandy soil and loamy soil was prepared by cyclic autoclave method,and the structure analysis and comparison of physical and chemical properties were carried out,aiming to provide a theoretical basis for the development of agricultural and sideline products of Chinese yam with added value of science and technology.
