摘要
可溶性膳食纤维作为一种热门的功能性食品原料,对人体具有重要的生理功能,其检测过程比较复杂,日常检测中经常会遇到糖或糖醇的干扰。因此,研究产生干扰的糖和糖醇并提出排除干扰的方法,有助于提高膳食纤维检测的准确度。通过对常见糖和糖醇进行系统研究,逐一确定其对膳食纤维的干扰情况。试验发现一部分糖和糖醇会产生干扰,这些物质有乳糖、异麦芽糖、乳糖醇等。本文提供了积分排除法和酶解法两种排除干扰的方法,对膳食纤维测试分析有一定的参考意义。
Soluble dietary fiber,as a popular functional food ingredient,has important physiological functions for the human body.Its detection process is relatively complex,and interference from sugars or alcohols is often encountered in daily testing.Therefore,studying the sugars and alcohols that cause interference and proposing methods to eliminate interference can help improve the accuracy of dietary fiber detection.By conducting systematic research on common sugars and alcohols,the interference of each on dietary fiber was determined.It was found that some sugars and sugar alcohols,including lactose,isomaltose and lactitol,would interfere.Two methods were provided for eliminating interference:integral exclusion method and enzymatic hydrolysis,which had certain reference significance for the testing and analysis of dietary fiber.
